Preparation
-Soak chickpea overnight and pressure cook until they're soft.
-Blend chopped tomato in blender.
Cooking Steps
Heat oil in a pan and add cumin seeds. Let them splutter.
Add chopped onions and sauté until translucent.
Add tomato puree , turmeric powder, coriander powder, garam masala, red chili powder, and salt. Cook the masala until the oil separates.
Add chopped spinach and cook until wilted.
Add boiled white chickpeas and mix well with the masala.
Add water as needed to adjust the consistency of the curry.
Simmer the curry for 5-10 minutes to allow the flavors to meld.
Garnish with fresh coriander leaves and serve hot.
