Cooking Steps
Step 1: To begin making the Vegetable Biryani with Chatpata Aloo recipe, firstly soak the rice in water for 15 to 30 minutes
Step 2: Temper all the spices mentioned under ‘For spices’ on dry heat for 2 to 3 minutes till the aroma starts to come, make sure to do this on low flame

Step 5: Next take about a tablespoon of oil and bring it to high heat in a heavy bottomed pan or biryani handi

Step 7: Take out on a kitchen paper towel to soak excess oilSeason with chat masala, salt, freshly ground pepper and lemon
Step 8: Keep them aside
Step 9: Next in a heavy bottomed pan, add 2 tablespoon oil and bring to medium heat
Step 10: Add onions, chilli, ginger and garlic and sauté till onions become translucent
Step 11: Add bell peppers, carrots and sauté for a couple of minutes
Step 12: Add the tempered spices and cook for a minute or so

Step 14: 5inch height of water with good quality basmati is enough) in the same wok
Step 15: Cover the wok and let it cook in steam
Step 16: Once completely cooked top it with chahtpatay aloo, lemon slice and slit chilli
Step 17: Add ghee and fresh onion while serving
