Preparation
-Pressure cook yellow lentil for 3-4 whistles.
Cooking Steps
In a large bowl, combine the cooked lentils, chopped red bell pepper, yellow bell pepper, red onion, and chopped cilantro.
In a small bowl, whisk together the olive oil, chili powder, cumin, smoked paprika, salt, and pepper to make the seasoning.
Drizzle the seasoning over the lentil mixture and toss to coat.
Spoon the lentil mixture onto the lettuce leaves and wrap them up like tacos.
Serve immediately.
