Cooking Steps
Step 1: To begin making the Vegan Kofta curry recipe, first add all the ingredients under ‘For the koftas’ except oil in a mixing bowl
Step 2: Mix and make lime sized balls of the mixture (adjust the amount of besan if required, so that the mixture is easy to handle)Heat oil in a wok and deep fry the koftas till golden brown
Step 3: Take out with a slotted spoon and drain on absorbent paper
Step 4: Alternatively, shallow fry in appe patra/paniyaram pan with a drizzle of oil till it is evenly browned, flipping once in between
Step 5: To make the gravy- Blend the onion, tomato, cashew nuts separately in a Blender to a fine pasteHeat oil in a Kadai
Step 6: Add the cumin seeds
Step 7: Once they sizzle add the onion and ginger garlic paste
Step 8: Fry, stirring continuously till the paste turns brown
Step 9: Add the tomato paste and cook till the water evaporates and you can see the oil oozing out
Step 10: Add garam masala, red chilli powder and mix
Step 11: Saute for a few seconds
Step 12: Add the cashew paste, sugar and salt
Step 13: Mix and add enough water to get the desired consistencyBoil the gravy for a couple of minutes
Step 14: To serve, pour the gravy in a serving bowl
Step 15: Place the koftas in it and garnish Vegan Kofta curry recipe with fresh coriander leaves
