Cooking Steps
Soak the cashews in water for at least 2-3 hours or overnight.
Drain the water from the cashews and rinse them thoroughly.
In a blender, add the cashews and 1 cup of water. Blend until smooth.
Add the remaining water, lemon juice, and salt to the blender. Blend again until everything is well combined and smooth.
Transfer the mixture to a clean and dry container.
Cover the container and let it sit at room temperature for 6-8 hours or until the curd thickens.
Once the curd has thickened, refrigerate it for at least 1-2 hours before serving.
The vegan curd is ready to use. You can store it in the refrigerator for up to a week.
