Varan Bhaat
Varan Bhaat is a popular Maharashtrian comfort food that is simple, nutritious, and flavorful. It consists of yellow lentil (toor dal) and rice cooked together and flavored with a tempering of spices and ghee. This recipe is vegetarian and can be made vegan by substituting the ghee with oil.

Ingredients
Rice, raw, milled
50 gms (50g)
Toor Dal (Raw)
50 gms (50g)
Chopped Onion
0.5 small cup (50g)
Chopped Tomato
1 small cup (100g)
Chopped Green Chilli
2 tsp (4g)
Ginger Paste
1 tsp (5g)
Garlic paste
1 tsp (5g)
Cumin seeds
0.5 tsp (2.5g)
Turmeric powder
0.25 tsp (1.25g)
Red chilli Powder
0.25 tsp (1.25g)
Ghee
1 tsp (5g)
Common salt
0.5 tsp (2.5g)
Fresh Coriander Leaves (chopped)

Instructions
Cooking Steps
Wash the toor dal and rice separately and soak them in water for 30 minutes.
Drain the water and add the dal and rice to a pressure cooker.
Add chopped onions, chopped tomatoes, green chilies, ginger-garlic paste, turmeric powder, red chili powder, and salt. Mix well.
Add 4 cups of water and stir gently.
Close the pressure cooker with a lid and cook on medium heat for 3-4 whistles.
Turn off the heat and let the pressure release naturally.
Once the pressure is released, open the lid and stir the varan bhaat gently.
Heat ghee or oil in a small pan over medium heat. Add cumin seeds and let them splutter.
Pour the tempering over the varan bhaat and mix well.
Garnish with fresh coriander leaves and serve hot.
