Cooking Steps
Step 1: We begin making the Udupi Style Heerekai Bajji Recipe, wash and peel the ridge gourd
Step 2: Cut them into roundels and set aside
Step 3: To make the bajji batterIn a mixing bowl, combine besan flour, rice flour, red chilli powder, turmeric powder, baking soda and salt along with 1/3 cup of water
Step 4: Mix well to a make a smooth batter
Step 5: Heat a kuzhi paniyaram pan, and add a teaspoon of oil in each of the cavities
Step 6: Dip the ridge gourd roundels in the batter completely and place it in the cavity
Step 7: Cook it till it crisp on either side
Step 8: Flip it over and continue to cook
Step 9: Remove and drain it on an absorbent paper
Step 10: Serve the Udupi Style Heerekai Bajji Recipe as a tea time snack along with Masala Chai
