Ubadiyu is a slow-cooked, one-pot dish of mixed seasonal vegetables, beans, and fresh herbs, cooked with minimal oil in an earthen pot. It is similar to "Undhiyu" but cooked traditionally in a pit or sealed pot, which enhances its smoky flavor and retains nutrients. Instructions
Preparation
Wash and peel the vegetables as needed. Keep the vegetables whole or in large chunks to retain texture.
Wash and string the papdi (beans).
Prepare a paste of green garlic, coriander leaves, ginger, green chilies, and sesame seeds.
Cooking Steps
Heat oil in a small pan. Add ajwain (carom seeds) and asafoetida. Let it cool slightly.
In an earthen pot (or a thick-bottomed pan).
- Layer the vegetables: purple yam, sweet potatoes, raw banana, papdi, and beans.
- Sprinkle the green, garlic-coriander paste, turmeric, red chili powder, coriander-cumin powder, and salt between layers.
Pour the prepared mustard oil seasoning over the vegetables. Cover the pot with a lid and seal it with dough to trap the steam inside.
- Cook on a low flame for 30-40 minutes, shaking the pot occasionally to prevent sticking.
Once cooked, open the pot, stir gently, and garnish with fresh coriander leaves.
