Instructions
Cooking Steps
Heat olive oil in a large pot over medium heat.
Add chopped onions and minced garlic to the pot and sauté for 2-3 minutes until the onions turn translucent.
Add crushed tomatoes and water to the pot and stir well.
Bring the mixture to a boil and then reduce the heat to low and simmer for 15-20 minutes.
Add chopped basil leaves and salt and pepper to taste and stir well.
Use an immersion blender to blend the soup until smooth. If you don't have an immersion blender, let the soup cool and then blend it in a blender.
Return the soup to the pot and heat it over low heat until it is hot.
