Instructions
Cooking Steps
Heat coconut oil in a pan and add mustard seeds, cumin seeds, and curry leaves. Let them splutter.
Add finely chopped vegetables, turmeric powder, and salt. Mix well.
Cover and cook the vegetables on medium heat for 10-15 minutes, until they are tender but still have a slight crunch.
Add grated coconut and red chilli powder. Mix well.
Cover and cook for another 1-2 minutes.
Serve hot with rice.
