Cooking Steps
Heat olive oil in a large pot over medium heat.
Add chopped leek and garlic. Sauté for 2-3 minutes until fragrant and softened.
Add diced carrots, rutabaga, and celery root to the pot. Stir well and cook for another 5 minutes.
Pour in the vegetable broth and add fresh thyme and bay leaf. Bring to a boil.
Reduce the heat to low and let the soup simmer for 25-30 minutes, or until the vegetables are tender.
Remove the bay leaf and thyme sprigs. Using an immersion blender or regular blender, puree the soup until smooth and creamy. If the soup is too thick, add water to adjust the consistency.
Season with salt and black pepper to taste.
Serve hot, garnished with a drizzle of olive oil or fresh herbs.
