Suji Besan Dhokla

Wheat, semolina
0.25 cup (60g)
Lemon, juice

Curry leaves

Ginger Paste

Besan (chickpea flour)
0.25 cup (60g)
Eno fruit Salt
0.5 tsp (2.5g)
Instructions
Cooking Steps
In a bowl, mix together semolina, besan, curd, water, ginger paste, green chili, and salt to make a smooth batter. Let it rest for 10 minutes.
Grease a dhokla plate or a steaming plate with oil.
In a separate bowl, add Eno fruit salt to the batter and mix well. The batter will become frothy.
Pour the batter into the greased plate and steam for 10-15 minutes or until a toothpick inserted in the center comes out clean.
Once done, remove the plate from the steamer and let it cool for a few minutes.
Cut the dhokla into small pieces.
In a pan, heat oil and add mustard seeds. Let them splutter.
Add curry leaves, Stir well.
Pour this tempering over the dhokla pieces.
Garnish with fresh coriander leaves and serve.
