Cooking Steps
Step 1: To start making Succotash, in a medium sauté pan, melt the butter over medium heat
Step 2: Add the minced garlic, sauté for a few seconds
Step 3: Next add onions, along with white part of spring onions and cook for 2 minutes or until they are translucent
Step 4: Next, add the red bell pepper and sauté until the peppers are well roasted
Step 5: Once the peppers are roasted, add the corn kernels, red kidney beans, lima beans, salt and pepper and stir fry until all the ingredients are well combined and the beans have absorbed the flavors
Step 6: You can additionally add herbs like basil, coriander or parsley to enhance the flavor of the Succotash Recipe
Step 7: Serve Succotash as a salad or a side dish for dinner along with a side of Garlic Bread with Herb Butter
