Cooking Steps
Step 1: To begin making the Keerai Vadai recipe, soak bengal gram for an hour or two
Step 2: Add soaked bengal gram, chillies, jeera, ginger and salt to a blender and blend it into a very coarse paste, leaving some of the Bengal gram whole as well
Step 3: Turn this into a bowl
Step 4: Add chopped spinach and mix it well
Step 5: Next, heat oil in a deep fry pan on medium flame
Step 6: Take approximately one tablespoon of the mixture in your hands
Step 7: Try and make it as round as possible
Step 8: Flatten it lightly and drop it into the hot oil and fry it till it is golden and crisp
Step 9: Remove it onto a kitchen towel to absorb the extra oil
Step 10: If you want to freeze them, just fry them 3/4th and when you are ready to eat, just dip them in the hot oil
Step 11: Fry them fully and serve
Step 12: Serve Keerai Vadai with Dhaniya Pudina Chutney, Tomato Garlic Chutney or any other chutney of your choice
Step 13: It makes a great rainy season snack
