Cooking Steps
Step 1: To begin making the Spinach and Sweet Potato Kofta in Green Curry Recipe, we will boil the sweet potato in a pressure cooker with water for about 4 whistle
Step 2: Till they are just soft
Step 3: If you over boil the sweet potato then it will be hard to shape them to balls
Step 4: Heat a kadai with oil, add chopped garlic and saute until they soften
Step 5: Add chopped onions and saute them till they turn translucent
Step 6: Add spinach leaves and saute till the spinach leaves leave out water and completely dries up
Step 7: Add all the seasonings mentioned including dried thyme leaves, dried oregano, red chilli flakes and black pepper powder
Step 8: Add in the cooked sweet potato and sprinkle salt according to your palate and also add besan flour
Step 9: By using potato masher, mash them well and combine the mixture together
Step 10: Switch off the heat and allow it cool down
Step 11: Shape them into medium sized balls and keep it aside
Step 12: Heat a kuzhi paniyaram pan with little oil in each cavities
Step 13: Place the kofta balls in the pan's cavities; drizzle the kofta's with a little oil and pan fry them until golden brown on both sides
Step 14: You will have to flip the kofta balls so they fry on all sides evenly
Step 15: Keep it aside
Step 16: To make the CurryGrind the coriander leaves, mint leaves and garlic in a mixer with water to a smooth paste
Step 17: Heat a big casserole and add the ground paste, with all the seasonings and add coconut milk
Step 18: Leave it to boil
Step 19: Check for salt and adjust the seasonings as per your requirements
Step 20: Switch off the heat and add the koftas one by one and serve hot
