Cooking Steps
Step 1: To begin with the Spinach and Cottage Cheese Eggless Ravioli Recipe first, we start by making dough for the ravioli
Step 2: Combine the all-purpose flour, wheat flour, salt, olive oil and water together to make a semi-stiff dough
Step 3: Cover and let it rest for 30-40 minutes
Step 4: Heat 1 tablespoon oil in a pan
Step 5: Add grated ginger and saute for half a minute
Step 6: Now add half chopped onions and saute till it becomes translucent
Step 7: Now add Spinach and cook it for 2-3 minutes
Step 8: Once it is done add cottage cheese, salt, pepper, and thyme leaves
Step 9: Mix well and saute it for another 2-3 minute more
Step 10: Knead the dough on the flat surface and take half of it
Step 11: Roll out the dough with the help of rolling pin into a thin sheet
Step 12: Use ravioli cutter and cut the rolled dough into rounds
Step 13: Use the spoon to fill the ravioli with spinach and cottage cheese filling
Step 14: Brush a little water on the sides of ravioli
Step 15: Now fold it with the help of a fork by pressing its sides
Step 16: Do the same with the rest of the dough
Step 17: Boil water in a pan and add oil and salt into it
Step 18: As the water starts to boil add stuffed ravioli and cook it for 2-3 minutesNow remove the ravioli's from the hot water and run them over cold water
Step 19: Heat oil in a kadhai and add remaining chopped onions into it
Step 20: Saute until they turn light brownNow add pasta sauce, salt, black pepper powder and cook for 2 minutes
Step 21: Now add boiled ravioli's
Step 22: Mix it and cook for another 2-3 minute
Step 23: Transfer it to the serving plate or bowl and serve hot, add some parmesan cheese if you want and serve the Spinach and Cottage Cheese Eggless Ravioli with Garlic Bread and Tiramisu for a complete meal
