Cooking Steps
Step 1: To begin with Soya Granule Samosa, add maida, wheat flour, salt, ghee and ajwain in a bowl
Step 2: Mix all the ingredients until it resembles bread crumbs
Step 3: Add water little at a time and knead the flour into a stiff dough
Step 4: Cover it with damp cloth and let it rest for about 30 minutes
Step 5: The next step is to prepare the filling for the Soy Granule Samosa Recipe
Step 6: Bring 2 cups of water to boil and add 1 teaspoon salt and soya granules into hot water
Step 7: Let the soy granules submerge fully and rest in hot water for about 12 to 15 minutes
Step 8: Once soaked and soft, drain the water and keep the soya granules aside
Step 9: If using fresh green peas, blanch them until they get cooked
Step 10: Drain and keep aside
Step 11: Heat a tablespoon of oil in a pan

Step 14: Add ginger garlic paste and cook till the raw smell of the paste goes off
Step 15: Add cumin powder, turmeric powder, red chili powder, coriander powder and salt, mix well cook for about 15 seconds
Step 16: Add soya granules and green peas, mix well, simmer and let it cook for 10 minutes in its own juices
Step 17: Turn off the heat and let the filling cool down completely
Step 18: Now, knead the dough once again and divide into 6 equal portions
Step 19: Take a portion, and roll out a portion of dough into 6 to 7 inch diameter circle
Step 20: Using a sharp knife, cut the circle into 2
Step 21: Take a portion of the samosa dough, join the edges to make a cone
Step 22: Add a 1 or 2 tablespoons of the soya granule samosa filling in the centre
Step 23: Apply water on the edges to seal the samosa cone
Step 24: Seal the edges tight and repeat the same process with the remaining dough and make the samosas
Step 25: Heat oil in a deep fry pan for frying
Step 26: Once oil turns hot, reduce the flame to medium and drop 2 to 3 samosas at a time and fry until golden brown on all the sides
Step 27: Drain on absorbent paper
