Cooking Steps
Step 1: To begin making the Snake Gourd Kootu recipe, wash snake gourd, cut and remove the spongy centre part along with seeds
Step 2: Chop into small pieces
Step 3: Wash the dal and take it in pressure cooker, add the chopped snake gourd along with 3 cups of water
Step 4: Pressure cook for 2 whistles
Step 5: Meanwhile, take coconut, cumin, coriander seeds and green chilli in mixer
Step 6: Add little water and grind into smooth paste
Step 7: Keep aside
Step 8: Heat oil in a heavy bottomed pan, add mustard seeds and cumin seeds
Step 9: Once it splutters, add red chilli and saute for a minute
Step 10: Add the cooked dal mixture from cooker after the pressure releases
Step 11: Stir well and add little water if required
Step 12: Add turmeric powder, asafoetida and sambar powder
Step 13: Mix well and add required salt
Step 14: Now, add the grounded coconut mixture and stir well until mixed
Step 15: Cook in low flame for 5 minutes until it starts boiling
Step 16: Once done, remove from flame and garnish with coriander leaves
Step 17: Serve hot to rice adding ghee
Step 18: Serve Snake Gourd Kootu along with Jeera Rasam and Steamed Rice for a weekday meal
