Cooking Steps
Heat a non-stick pan or tawa over medium heat.
Add broken vermicelli noodles to the pan and dry roast them until they turn golden brown. Set aside.
In the same pan, add mustard seeds, cumin seeds, urad dal, and chana dal. Sauté until they turn golden brown.
Add chopped onions and sauté until they turn translucent.
Add chopped tomatoes and sauté until they turn mushy.
Add grated carrots, green peas, turmeric powder, and salt. Mix well.
Add 2 cups of water to the pan and bring to a boil.
Add the roasted vermicelli noodles to the pan and mix well.
Cover the pan with a lid and let it cook over low heat for 5-7 minutes until the vermicelli is cooked and the water is absorbed.
Garnish with fresh coriander leaves and serve hot.
