Instructions
Preparation
Roast Seeds: Dry roast the sunflower seeds, pumpkin seeds, and amaranth seeds (if not already puffed) over a low flame until they turn aromatic. Set aside to cool.
Roast Makhana: Dry roast the makhana until they turn crispy. Keep stirring to avoid burning.
Cooking Steps
In a large pan, heat oil over medium heat.
Add the chivda to the pan and lightly roast it for 2-3 minutes until crisp. Remove and set aside.
In the same pan, add all the roasted seeds, makhana, and bhuna chana. Roast for 2 minutes over low heat.
Sprinkle red chili powder, chaat masala, and salt over the mixture. Toss well to coat everything evenly.
Add the roasted chivda to the pan and mix everything together gently.
Let the namkeen cool completely. Transfer it to an airtight glass jar for storage.
