Cooking Steps
In a large pot, bring the water to a boil. Add the spinach and let it boil for 1-2 minutes until it is wilted.
Drain the spinach and rinse it with cold water to stop the cooking process. This will also help remove the excess potassium.
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes and sauté for 1-2 minutes until the garlic is fragrant.
Add the leached spinach to the skillet and sauté for 2-3 minutes until it is heated through.
Season with salt and pepper to taste.
Serve the spinach immediately.
