Mix flour, salt, and carom seeds in a bowl.
Add little oil and rub into the flour until crumbly.
Add water little by little and knead into a firm dough.
Cover with a damp cloth and rest for 30 minutes.
Heat oil in a pan, add cumin seeds and let them splutter.
Add ginger, green chili, and sauté for a few seconds.
Add boiled potatoes, peas, and all the spices. Mix well.
Cook for 5-7 minutes until fragrant.
Stir in fresh coriander, then let the mixture cool completely.
Divide the dough into small balls and roll into ovals (~6 inches).
Cut each oval in half to make two semi-circles.
Form a cone with the dough, fill with the potato mixture, and seal the edges with water.
Heat oil in a deep pan over medium heat.
Fry the samosas in batches on low-medium heat until golden and crisp.
Remove and drain on paper towels.
