Cooking Steps
Step 1: To begin making S'mores Cake Recipe, prep up all the ingredients first
Step 2: *For Graham Crackers:This is adapted from The Bakefeed Winter 2017 Issue
Step 3: You can use the store bought ones as well
Step 4: In a large bowl, beat butter, brown sugar, honey and molasses till combined well
Step 5: In a another mixing bowl, add baking powder, whole wheat flour and all purpose flour and mix well
Step 6: You can sieve these dry ingredients as well, so that there are no lumps and the mixture is uniform
Step 7: Add the dry ingredients gradually into the bowl of the butter- sugar mixture
Step 8: Once all the ingredients are incorporated and thoroughly mixed and forms a tight dough
Step 9: Roll out the dough by dusting onto a parchment sheet to about 1/4 - 1/2 inch thickness and let it chill in the refrigerator for 30 minutes
Step 10: Preheat the oven to 180 degrees celsius
Step 11: Cut the dough into small squares of 1
Step 12: 5 - 2 inches (This will make it baking evenly)
Step 13: Bake for about 10-12 minutes
Step 14: Once baked, let it cool on a cooling rack, you can crack the cookies on the cuts made before baking, so they form small squares
Step 15: For Graham Cracker Cake:Blitz the graham crackers in a blender until it is into fine crumbs
Step 16: In a large bowl, beat the cream and butter until light and fluffy
Step 17: Add and beat one egg at a time with a hand whisk
Step 18: Add milk to the mixture
Step 19: Sift the flour, graham cracker crumb and baking powder into the wet ingredients
Step 20: Mix thoroughly until completely incorporated
Step 21: Preheat the oven to 180 degrees celsius
Step 22: Grease and line the cake tins with parchment paper
Step 23: Divide the batter equally into 3 baking tins
Step 24: I have used 3 inch cake tins
Step 25: Bake for 30-35 minutes or until done
Step 26: This time depends on your oven, cake dish used and the amount
Step 27: So, using a wooden skewer, check to see if completely baked
Step 28: Once baked, the wooden skewer inserted in the middle with come out clean
Step 29: Let it cool on a cooling rack
Step 30: For Marshmallow Fluff:To make the marshmallow fluff, clean the bowls using vinegar or lemon juice
Step 31: This will help remove all the bits of grease that might be on the surface of the bowl
Step 32: Add One egg white, lemon juice / cream of tartar in the bowl, start beating it in a stand mixer or using a hand mixer
Step 33: Whisk the eggs until soft peaks are formed
Step 34: In a another bowl, add sugar and water
Step 35: Place this bowl on a pan with simmering water, let it cook until the sugar is completely dissolved
Step 36: Add this sugar syrup a little at a time in the egg white fluff
Step 37: Continue whisking until stiff peaks are formed
Step 38: Keep aside
Step 39: For Dark Chocolate Ganache:Chop the dark chocolate into small pieces, add this pieces in a bowl
Step 40: Heat the cream and add the cream into the bowl with chocolate chunks
Step 41: Let it rest for 5-10 minutes
Step 42: Using a spatula/whisk, mix the cream into the melted chocolate
Step 43: Let it chill in the refrigerator for 30 minutes or longer depending on the consistency needed for frosting
Step 44: Assembling the cake:Trim the tops of the cake to make them flat and uniform in size
Step 45: On a cake board, place a small dollop of ganache
Step 46: Place the bottom layer of cake on the cake board, add a layer of dark chocolate ganache frosting on top of the cake layer
Step 47: Place the second layer of cake on the frosting, repeat for all layers
Step 48: Using the dark chocolate ganache do the crumb coat on the cake
Step 49: Let it chill for 15-30 minutes, until the ganache is set slightly on the cake
Step 50: Frost the cake
Step 51: Pipe the marshmallow fluff on the side of the cake as well as on the top of the cake
Step 52: Using a kitchen torch, torch the marshmallow fluff to give it a toasty look and taste
Step 53: Garnish the cake with some graham cracker crumbs
