Preparation
For Garlic Mayonnaise:
-Whisk 1 egg yolk, 1 tsp lemon juice, and 1 minced garlic clove in a bowl.
-Slowly drizzle in oil, whisking continuously or blend until creamy.
-Add salt to taste, adjust lemon if needed.
Cooking Steps
Boil chopped potatoes and carrots until they are cooked.
Boil chopped green beans until they are cooked.
Boil eggs until they are hard-boiled. Let them cool down and chop them into small pieces.
In a large bowl, combine the boiled and chopped vegetables and eggs.
In a separate bowl, whisk together garlic mayonnaise, olive oil, salt, and pepper.
Pour the dressing over the vegetables and eggs. Toss well to coat.
Garnish with chopped fresh parsley leaves and serve.
