Preparation
**Roast the Vegetables**:
- Arrange the halved tomatoes, onion quarters, and garlic cloves on a baking tray.
- Drizzle olive oil evenly over the vegetables and sprinkle with salt, black pepper.
- Roast in the preheated oven until the tomatoes are soft and slightly charred
Cooking Steps
Transfer the roasted vegetables to a blender or food processor.
Add 2 cups of water and dried basil.
Blend until smooth. If you prefer a chunkier texture, blend lightly or pulse.
Pour the blended soup into a pot and heat on medium flame.
Simmer for 5-10 minutes, adjusting the consistency by adding more water if needed.
Ladle the soup into bowls and garnish with fresh basil leaves.
