Cooking Steps
Step 1: To begin making the Roasted Pumpkin, Orange and Urad Dal Salad Recipe, we will first pressure cook the dal with 1 cup water and salt to two whistle and switch it off
Step 2: Once done allow the pressure to release naturally and drain the dal and keep it aside
Step 3: Pre heat the oven to 180 degree Celsius to 10 minutes
Step 4: Keep your pumpkin slices lined over a baking tray and drizzle some oil, salt and pepper and bake it for at least 20 minutes
Step 5: Once the pumpkin become soft and lightly crisp add it into a mixing bowl
Step 6: Add dal, orange segments in to the same bowl
Step 7: In a small bowl, whisk in all the ingredients together until it emulsifies and pour it over the salad and toss it well
Step 8: Serve it on to a plate and garnish with some coriander leaves
