Preparation
Roast Rice Flour: Dry roast the rice flour in a heavy-bottomed pan over low heat for 5-7 minutes until you get a slightly nutty aroma. Do not let it brown. Let it cool completely.
Chop Nuts: Finely chop the almonds and walnuts.
Cooking Steps
In a mixing bowl, add the roasted rice flour, jaggery powder, and cardamom powder. Mix well.
Heat the ghee until it's melted. Slowly pour the ghee into the dry mixture and mix thoroughly. The mixture should resemble wet sand.
Stir in the chopped nuts for added texture and flavor.
If the mixture feels dry and doesn't hold together, add 1-2 tbsp of warm milk, a little at a time, and mix until you can form smooth, firm balls.
Take small portions of the mixture and shape them into round laddus using your palms. Repeat until all the mixture is used up.
Allow the laddus to cool completely and set at room temperature.
