Preparation
Wash & Soak:
- Wash the rice and dal thoroughly to remove dust and impurities.
- Soak them in water for 3-4 hours.
- Rinse again after soaking and drain well.
Drying:
- Spread the soaked rice and dal on a clean cloth or plate.
- Dry under the sun or in a well-ventilated area until completely moisture-free to prevent spoilage.
Cooking Steps
Roasting:
- Heat a thick-bottomed pan on low flame.
- Dry roast the rice first until it becomes slightly crisp and aromatic.
- Roast the dal separately until it turns light golden and releases a nutty aroma.
- Allow both to cool completely.
Grinding:
- Grind the roasted rice and dal together to a fine powder using a food processor or grinder.
- (Optional) Sieve the powder to remove coarse particles for a smoother texture suitable for infants.
Storage:
- Store the khichdi powder in an airtight container.
- Shelf life: 1 month at room temperature or 2–3 months if stored in the refrigerator.
