Instructions
Preparation
Rinse the Red rice poha in a colander and drain the water. Set it aside.
Cooking Steps
Heat oil in a pan over medium heat. Add mustard seeds and cumin seeds and let them splutter.
Add onions and green chilies and sauté until the onions are translucent.
Add chopped carrots, sliced capsicum, and green peas. Stir-fry for 2-3 minutes until the vegetables are slightly tender.
Add turmeric powder and salt. Stir well.
Add the rinsed red rice poha and stir-fry for 2-3 minutes until the poha is heated through.
Add lemon juice and mix well.
Garnish with fresh coriander leaves and serve hot.
