Preparation
Red Rice Preparation:
- Rinse rice thoroughly and cook it in a 2:1 ratio of water to rice until fluffy (about 15 minutes). Set aside.
Sauce Preparation:
- Whisk together soy sauce, oil, rice vinegar, honey, garlic, ginger, and chili flakes in a bowl.
Cooking Steps
Sautéed Vegetables:
Heat oil in a non-stick pan over medium heat.
Add broccoli, carrots, bell peppers, and zucchini. Sauté for 5-7 minutes until tender but still crisp. Remove and set aside.
Sautéed Tofu:
In the same pan, add tofu cubes and sauté for 5-7 minutes, flipping occasionally, until golden and slightly crispy.
Combine and Serve:
In a bowl, add a layer of cooked red rice as the base.
Top with sautéed vegetables and tofu.
Drizzle the prepared sauce over the bowl.
Seve it.
