Instructions
Preparation
Red Rice Preparation:
- Rinse red rice thoroughly and soak for 30 minutes. Cook it in a 2:1 ratio of water to rice until tender (about 25-30 minutes). Set aside.
Chicken Preparation:
- Marinate chicken cubes with olive oil, salt, black pepper, garlic minced, and paprika for 15-20 minutes.
Sauce Preparation:
- Whisk together soy sauce, rice vinegar, olive oil, and chili flakes in a small bowl.
Cooking Steps
Heat oil in a non-stick pan over medium heat.
Add marinated chicken cubes and cook for 5-7 minutes, flipping occasionally, until golden and fully cooked. Remove and set aside.
Sautéing Vegetables:
In the same pan, add the broccoli, carrots, bell peppers.
Sauté for 5-7 minutes until tender-crisp. Season with a pinch of salt and pepper.
Assemble the Bowl:
In a bowl, add a layer of cooked red rice as the base.
Top with the sautéed chicken and veggies.
Drizzle the prepared sauce over the bowl.
Garnish with fresh parsley.
