Wheat, semolina

Skimmed Milk Curd
0.25 cup (50g)
Ginger Paste
1 tsp (5g)
Chopped Green Chilli
1 tsp (2g)
Common salt
0.5 tsp (2.5g)
Rice bran oil
1 tsp (5g)
Mustard seeds

Fresh Coriander Leaves (chopped)

Instructions
Cooking Steps
In a bowl, mix together the rava, curd, water, ginger paste, green chili, and salt to make a batter. Mix well to remove any lumps.
Cover the bowl and let the batter rest for 10-15 minutes.
Grease a dhokla plate or any round, flat-bottomed dish with oil.
In a small pan, heat the remaining oil over medium heat. Add the mustard seeds and sesame seeds and let them splutter.
Add the tempering to the batter and mix well.
Add Eno fruit salt to the batter and mix gently. The batter will become frothy.
Pour the batter into the greased dish and steam for 10-12 minutes until the dhokla is cooked.
Let the dhokla cool for a few minutes before cutting it into pieces.
Garnish with chopped coriander leaves and serve.
