Instructions
Preparation
-Wash and soak quinoa, urad dal separately overnight.
-Drain the water from the soaked quinoa and urad dal. Grind them together in a blender until smooth.
- Add rice flour and let the batter ferment for 4-5 hours.
Cooking Steps
Transfer the fermented batter to a large mixing bowl and add salt, cumin seeds, mustard seeds, and grated ginger. Mix well to combine.
Heat a non-stick pan over medium heat. Grease it lightly with oil.
Pour a ladleful of batter onto the pan and spread it evenly to form a thick pancake.
Cook until the bottom side is golden brown and the top side is set.
Sprinkle chopped onions, tomatoes, and bell peppers to the batter and cook.
Flip the uttapam and cook for another minute until it is golden brown on both sides.
Repeat with the remaining batter to make more uttapams.
Serve hot.
