Preparation
Rinse the quinoa: Place quinoa in a fine mesh sieve and rinse under cold water for 30 seconds to remove its natural bitterness.
Cooking quinoa: Bring water to a boil in a saucepan, add quinoa, lower the heat, cover, and simmer for 15-20 minutes until all the water is absorbed.
Cooking Steps
Preheat oven to 375°F (190°C).
In a mixing bowl, combine cooked quinoa, olive oil, salt, black pepper.
Spread the mixture evenly onto a parchment-lined baking tray, shaping it into a rectangle about 1/2 inch thick.
Bake for 20-25 minutes or until the edges are golden and the surface is firm.
Allow it to cool slightly, then cut into toast-sized pieces.
Serve.
