Instructions
Preparation
-Wash and soak quinoa.
Cooking Steps
In a large pot, heat olive oil over medium heat.
Add chopped onions and garlic. Cook until the onions are translucent.
Add chopped tomatoes and cook for 3-4 minutes until they soften.
Add rinsed quinoa, water, cumin powder, coriander powder, turmeric powder, salt, and pepper. Stir well.
Bring the mixture to a boil, then reduce the heat and let it simmer for 15-20 minutes until the quinoa is cooked.
Add spinach leaves and cook for 2-3 minutes until they wilt.
Use a blender or hand blender to puree the soup until smooth.
Season with salt and pepper to taste.
Serve hot.
