Cucumber

Instructions
Preparation
Wash the quinoa thoroughly under running water to remove its natural bitter coating (saponin).
If using dry green moong beans, soak them overnight and allow them to sprout for 1-2 days. If using sprouted moong, rinse them well.
Cooking Steps
Cook the quinoa: Add the washed quinoa to a pot with water (2x the amount of quinoa). Cover and cook on low heat for 12-15 minutes until the water is absorbed, and the quinoa is tender. Fluff with a fork and set aside to cool slightly.
Steam the sprouted moong beans: In a steamer or a pot with a steaming basket, steam the sprouted moong for 5-7 minutes until tender but still retaining a slight crunch.
In a large mixing bowl, combine the cooked quinoa, steamed moong, chopped cucumber, and cherry tomato.
Drizzle olive oil and lemon juice over the salad. Add salt and black pepper to taste. Toss well to combine.
Garnish with chopped fresh coriander leaves and serve warm.
