Cooking Steps
In a medium saucepan, combine the quinoa and 2 cups of water. Bring to a boil, then reduce the heat and simmer for 15-20 minutes until the quinoa is tender and the water has been absorbed.
In a large bowl, combine the cooked quinoa, mixed greens (chopped spinach, lettuce), sliced avocado, chopped cucumber, cherry tomatoes, red onion, and parsley.
Drizzle the lemon juice over the salad and toss to combine.
Season with salt and pepper, to taste.
