Cooking Steps
In a medium saucepan, combine the quinoa and 2 cups of water. Bring to a boil, then reduce the heat and simmer for 15-20 minutes until the quinoa is tender and the water has been absorbed.
In a large bowl, combine the cooked quinoa, chickpeas, red bell pepper, cucumber, red onion, parsley, and mint.
