Cooking Steps
Step 1: We begin making the Pudalangai Thogayal Recipe (Snake Gourd Chutney Recipe) by heating a kadai, add oil and crackle the urad dal, channa dal, sesame seeds and cumin seeds
Step 2: Sauté for few minutes
Step 3: Then add in the cut snake gourd, chilies and ginger
Step 4: Sauté till the bottle gourd gets cooked
Step 5: Once done add the tamarind water and salt
Step 6: Keep cooking till the water reduces and thickens
Step 7: Once done, let it cool down and grind it into a smooth paste in the mixer
Step 8: Keep it aside
Step 9: Next to make the tempering, heat oil in a small skillet and temper the ingredient slowly that is mentioned above and add it on top of the chutney and serve
