Cooking Steps
Step 1: To make Aloo Windaloo recipe, first place a saucepan or kadhai on the gas
Step 2: Now add chopped potatoes, water, salt and turn on the gas
Step 3: Boil until the potatoes are cooked
Step 4: Now take out the potatoes from the water and keep the boiled water separately as well
Step 5: In a mixer grinder, add dry Kashmiri chilli, fenugreek seeds, garlic, small onion, cumin, turmeric powder, vinegar and water
Step 6: Make a paste by grinding it
Step 7: Now heat oil in a pan
Step 8: Add mustard seeds and after 10 seconds add curry leaves
Step 9: Now add windloo paste and cook for 4 to 5 minutes
Step 10: Add 1/2 cup boiled water, potatoes, salt to taste and mix
Step 11: Let it cook for 10 to 15 minutes
Step 12: Add some sugar and turn off the gas after 1 minute
Step 13: Serve
