Cooking Steps
Step 1: To make the Potato And Paneer Reuben Sandwich, first mix the honey mustard dressing, lemon juice, tomato ketchup and chopped onion in a small bowl and keep aside
Step 2: In another medium bowl, combine the hash brown, grated paneer, salt and stir well
Step 3: Divide the mixture to form four patties
Step 4: If the mix feels like it is not holding shape, form rough patties, they retain shape once cooked, so do not fret
Step 5: Heat a skillet with some oil and add shallow fry the hash brown paneer patties, turning them on either side until crispy and golden brown
Step 6: Meanwhile arrange the slices of bread on a board
Step 7: Butter each slice with a little butter and arrange cheese slices, followed by some sauerkraut on 4 of the slices
Step 8: Place the cooked hash brown paneer patties on top of the sauerkraut
Step 9: Cover the patties with the remaining 4 slices of bread cheese and butter side down, and press down gently
Step 10: Warm a skillet to medium and arrange the sandwiches on the skillet
Step 11: Press down with a plate, and place a weight on top to hold the sandwiches down
Step 12: This will help the cheese melt
Step 13: Cook on medium until the sandwich is golden brown
Step 14: Turn over and repeat till it is golden on both sides
