Green Beans (Chopped)

Coconut (Fresh)

Mustard seeds

Split Urad Dal (Raw)
0.5 tsp (2.5g)
Curry leaves

Instructions
Preparation
-Grate fresh coconut. keep aside.
Cooking Steps
Heat oil in a pan over medium heat.
Add mustard seeds and let them splutter. Then add split urad dal and fry until golden brown.
Add curry leaves. Sauté for a few seconds until aromatic.
Add the chopped vegetables (green beans and carrots) to the pan. Stir well.
Sprinkle turmeric powder and salt. Mix to coat the vegetables evenly.
Add 2 tbsp of water, cover with a lid, and cook on low-medium heat for 5-7 minutes, or until the vegetables are tender but not mushy.
Once the vegetables are cooked, add the grated coconut and stir well to combine.
Cook for another 1-2 minutes, then remove from heat.
Serve hot.
