Cooking Steps
Step 1: To make Pitor vegetable recipe, we will first make Pitor
Step 2: In a large bowl, add gram flour, curd, water, ginger, green chilli and mix well
Step 3: Make the batter
Step 4: Heat the oil in a pan
Step 5: Add cumin seeds and let it splutter
Step 6: After tempering, add asafetida and mix
Step 7: Now add gram flour mixture and keep stirring so that there are no lumps
Step 8: Cook until thickened and then turn off the gas
Step 9: Now take this gram flour mixture in a plate
Step 10: Keep in mind that grease the plate thoroughly with oil or ghee
Step 11: Keep it aside for 1 hour and after cooling, grind it to a square
Step 12: Now heat oil in a pan
Step 13: Add Pitor to it and cook till it becomes brown and crisp
Step 14: Remove and keep aside
Step 15: Now to make curry, add yogurt, red chilli powder, turmeric powder, coriander powder and mix well
Step 16: Heat oil in a pan
Step 17: After the oil is hot, add cumin seeds and let it splutter
Step 18: Now add dry red chilies and cook for 10 seconds
Step 19: Now add green chilies and cook it for 10 seconds
Step 20: Reduce the flame and add the curd mixture
Step 21: Keep stirring and cook for 3 to 4 minutes
Step 22: Now add water and let it boil
Step 23: Add salt and cook for 15 minutes
Step 24: Now add Pitor to it and cook it for the next 3 to 4 minutes
Step 25: Turn off the gas and serve
Step 26: Serve Pitor Ki Sabzi along with Burani Raita and Phulka for dinner
