Spinach
300 gms (300g)
Chopped Onion
0.5 small cup (50g)
Chopped Tomato
1 small cup (100g)
Clove Garlic, Minced

Olive Oil

Ginger, fresh
1 tsp grated (2g)
Chopped Green Chilli

Cumin seeds

Turmeric powder

Garam Masala

Preparation
Wash spinach thoroughly in cold water to remove any dirt or grit.
Blanch the spinach in boiling water for 2-3 minutes, then transfer it to an ice bath to retain its bright green color. Drain and puree the spinach in a blender to make a smooth paste.
Cooking Steps
Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
Add finely chopped onions and sauté until they turn golden brown.
Add minced garlic, grated ginger, and chopped green chilies. Sauté for 1-2 minutes until fragrant.
Add chopped tomatoes and cook until they turn soft and mushy.
Add turmeric powder, coriander powder, and salt. Mix well.
Add the pureed spinach to the pan and stir to combine with the masala.
Let the gravy simmer for 5-7 minutes on low heat. Adjust the consistency by adding water as needed.
Sprinkle garam masala and mix. Turn off the heat.
Garnish with fresh coriander leaves and serve hot.
