Cooking Steps
Heat oil in a pan on medium heat.
Add chopped garlic and cumin seeds (jeera) to the hot oil. Sauté for 1-2 minutes until fragrant.
Add the matar (green peas) and chopped carrots to the pan. Sprinkle salt, turmeric powder, and red chili powder. Mix well.
Sauté the vegetables for 2-3 minutes, then cover the pan with a lid. Allow the vegetables to cook on low-medium heat for about 8 minutes, stirring occasionally.
Once the matar and carrots are tender, add the chopped spinach (palak) to the pan.
Increase the heat to high and cook, stirring occasionally, until the spinach releases its moisture and the mixture becomes dry (approximately 3-5 minutes).
Serve hot.
