Cooking Steps
Step 1: To make spinach eggplant vegetable, first heat oil in a pan
Step 2: Add the spinach, some salt and cook till the spinach becomes soft
Step 3: After cooking, turn off the gas and keep it aside
Step 4: Now put some more oil in the same pan
Step 5: Add cumin and curry leaves to it
Step 6: Allow to cook for 15 seconds
Step 7: After that add ginger, garlic, brinjal, salt
Step 8: Mix, cover the pan and cook until the eggplants become soft
Step 9: Bitch kept moving between bitches
Step 10: After the eggplant becomes soft, add asafetida, coriander powder, red chili powder and let it cook for 2 minutes
Step 11: Now add cooked spinach and mix
Step 12: Allow to cook and serve for 30 seconds
Step 13: Serve the Palak brinjal with Gujarati kadhi and fenugreek thepla for dinner
