Cooking Steps
Step 1: To begin making the Palak And Peas Kachori recipe, we will first make the dough for the kachori
Step 2: Take maida, sooji, spinach puree, salt, ajwain and oil in a mixing bowl
Step 3: Mix it nicely with the tips of your fingers and form a breadcrumb like texture
Step 4: Add ice cold water little by little to form a tight dough
Step 5: (This is an important point to keep in mind
Step 6: If the dough is soft, the texture of the outer skin will not come good)
Step 7: Cover it with damp cloth and keep the dough aside for 15 to 20 minutes
Step 8: The next step is to prepare the filling for the kachoris
Step 9: Add green peas in the grinder and gring it coarsly
Step 10: Heat some oil in a heavy bottomed pan
Step 11: Once the oil is hot, add asafoetida
Step 12: Later add coarse green peas paste
Step 13: Saute it for 2 to 3 minutes such that moisture dries out
Step 14: This step is important else kachori will become soft
Step 15: To the dry peas mix add salt, chilli powder, crushed saunf, amchoor powder and garam masala
Step 16: Mix well such that everything combines well
Step 17: Stuffing for palak kachori is ready
Step 18: The next step is to make the Kachori
Step 19: Divide the kachori dough to small lemon size balls
Step 20: Dust and roll out each ball lightly into thick circular puri
Step 21: Don't make it thin
Step 22: Put 1-2 teaspoons stuffing mixture in the center of puri, bring its ends together and seal its edges nicely
Step 23: Slightly press with hand or roll lightly to flatten the stuffed balls
Step 24: Heat oil over medium flame to deep fry kachori
Step 25: When the oil is just hot, slide the kachoris in the pan
Step 26: Cook on low heat till lightly browned from both the sides
Step 27: Remove the kachori on a tissue paper to absorb the excess oil from the kachoris
Step 28: Once it is done, serve it hot
Step 29: Serve this mouth watering Palak And Peas Kachori along with Dhaniya Pudina Chutney and Date Tamarind Chutney for tea time snacks or as evening snacks
