Instructions
Preparation
Dry Roast Base:
- Roast rolled oats for 4–5 minutes on low flame until crisp. Set aside.
- Roast poha(flattened rice) until crunchy and lightly crush larger ones. Set aside.
- Roast makhana for 2–3 minutes on low flame until crisp. Set aside.
Prepare Masala:
- Combine turmeric, red chilli powder, chaat masala, black pepper powder, salt, black salt, in a small bowl. Keep ready.
-Cut dry coconut in a thin slices
Cooking Steps
Heat oil in a wide pan.
Add cumin and mustard seeds; let them splutter.
Add finely chopped green chilli and sauté for a few seconds.
Add pumpkin seeds, sunflower seeds, flaxseeds and sesame seeds. Roast for 1–2 minutes.
Add raisins and cranberries; roast until they puff slightly.
Add sliced coconut; roast until light golden.
Add the prepared masala mix into the pan.
Stir quickly on low flame to avoid burning the spices.
Add the roasted oats, makhana, and poha to the pan.
Toss everything well for 2–3 minutes to combine flavors evenly.
Turn off the heat and let it cool completely to maintain crispness.
Store in an airtight container at room temperature.
