Preparation
Pre-soak the chia seeds: Mix 2 tsp of chia seeds with 50ml of water in a small bowl. Let it sit for about 30-40 minutes until the chia seeds swell and form a gel-like consistency.
Beat the Curd: Whisk the low-fat curd (plain yogurt) until smooth and creamy. Set aside.
Cooking Steps
In a bowl, mix the rolled oats with the beaten curd . Let it sit for 60 minutes at room temperature to soften the oats slightly.
Once the oats are softened, stir the mixture well to ensure even consistency.
Take a serving bowl or glass and layer the oats and curd mixture as the base.
Add the pre-soaked chia seeds on top of the oats layer.
Arrange the sliced strawberries, blueberries, and chopped dates as a topping.
