Step 1: To begin making the No Onion And No Garlic Aloo Gajar Matar Ki Sabzi recipe, Heat oil in a kadhai/wok
Step 2: When oil gets heated add mustard seeds
Step 3: After mustard seeds flutter, add cumin seeds
Step 4: After cumin seeds flutter, add asafoetida and mix
Step 5: Add curry leaves and fry for 2 minutes
Step 6: Add the slit green chillies
Step 7: Now add the cubed potatoes, cubed carrots and green peas
Step 8: Add 1 cup water and simmer on low flame with closed lid till carrots and potatoes get boiled
Step 9: This would take around 10-15 minutes
Step 10: Open the lid and add turmeric powder and red chilli powder and mix well
Step 11: Add salt to taste and garnish with chopped coriander leaves
